Coconut Curry Veggie Bowl

Ingredients

  • 1 tbsp oil

  • 1 onion, diced

  • 2 cups cauliflower florets

  • 1 red bell pepper, sliced

  • 1 medium carrot, sliced

  • 1 can (13.5 oz) coconut milk (light or full-fat)

  • 2–3 tsp Paramour spice

  • ½ tsp salt (optional)

  • Cooked rice for serving

Instructions

  1. Sauté onion in oil 3 min → soften.

  2. Add veggies → cook 5–7 min.

  3. Stir in coconut milk + Paramour seasoning → simmer 5–8 min.

  4. Adjust consistency with splash of water if needed.

  5. Serve over rice.
