1 onion, diced

2 cups cauliflower florets

1 red bell pepper, sliced

1 medium carrot, sliced

1 can (13.5 oz) coconut milk (light or full-fat)

2–3 tsp Paramour spice

½ tsp salt (optional)

Cooked rice for serving
Instructions

Sauté onion in oil 3 min → soften.

Add veggies → cook 5–7 min.

Stir in coconut milk + Paramour seasoning → simmer 5–8 min.

Adjust consistency with splash of water if needed.

Serve over rice.
