Crispy Chickpea Power Salad

Ingredients

  • 1 can (15 oz) chickpeas — rinsed, patted dry

  • 1 tbsp olive oil

  • 2 tsp Paramour “Around Town”

  • 4 cups mixed greens

  • ½ cucumber, diced

  • 1 cup cherry tomatoes, halved

  • 2 tbsp feta crumbles

  • Dressing: 1 tbsp olive oil + 1 tbsp lemon juice + pinch salt

Instructions

  1. Toss chickpeas with oil + Paramour spice.

  2. Spread on sheet pan; roast 425°F for 15–18 min until crisp.

  3. Build bowls: greens → cucumber → tomatoes → chickpeas → feta.

  4. Drizzle dressing before serving.
