Mexican Hot Chocolate Cookies

These decadent chocolate cookies get a warm, alluring kick from your "Spicy Affair" seasoning, reminiscent of classic Mexican hot chocolate.

Ingredients

 

  • 1¾ cups All-Purpose Flour

  • ¾ cup Unsweetened Cocoa Powder (Dutch-processed for deep color)

  • 1 teaspoon Paramour Spice Co. "Spicy Affair" Seasoning (add another ¼ tsp for extra heat)

  • 1 teaspoon Baking Soda

  • ½ teaspoon Salt

  • 1 cup (2 sticks) Unsalted Butter, softened to room temperature

  • 1 cup Granulated Sugar

  • ½ cup Brown Sugar, packed

  • 2 large Eggs

  • 1 teaspoon Vanilla Extract

  • 1 cup Chocolate Chips (Semi-Sweet or Dark), optional

 

Instructions

 

  1. Prep: Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper.

  2. Combine Dry Ingredients: In a medium bowl, whisk together the flour, cocoa powder, baking soda, salt, and the "Spicy Affair" Seasoning.

  3. Cream Butter and Sugar: In a large bowl, use an electric mixer to cream the softened butter, granulated sugar, and brown sugar until light and fluffy.

  4. Add Wet Ingredients: Beat in the eggs one at a time, then mix in the vanilla extract until just combined.

  5. Mix Dough: Gradually add the dry ingredient mixture to the wet ingredients, mixing on low speed until the dough just comes together. Stir in the chocolate chips by hand.

  6. Chill: Cover the dough and chill in the refrigerator for 30 minutes.

  7. Scoop and Bake: Scoop the dough into 1½-inch balls and place them 2 inches apart on the prepared baking sheets.

  8. Bake: Bake for 10–12 minutes. The edges should be set, but the center should still look slightly soft for a chewy cookie.

  9. Cool: Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack.

 

Dessert Topper Finish (Two Options)

For a captivating final presentation, use your dessert topper of choice:

  • The "Sweet Seduction" Finish: Immediately after removing the cookies from the oven, dust them lightly with your preferred sweet seasoning or dessert topper blend (such as a cinnamon/vanilla sugar mix).

  • The "Delicious Drizzle": Melt 4 oz of white chocolate and drizzle it over the cooled cookies. Finish with a final, light sprinkle of the "Spicy Affair" Seasoning on top of the chocolate drizzle.
