Paramour Spice Roasted Chickpea & Veggie Bowl

Ingredients:

  • 1 can (15 oz) chickpeas, drained & rinsed

  • 1 red bell pepper, chopped

  • 1 zucchini, sliced

  • 1 small red onion, cut into wedges

  • 2 tbsp olive oil

  • 1–2 tsp Paramour Spice “Around Town Everything Seasoning”

  • Salt & pepper to taste

  • Optional: handful of fresh spinach or arugula

  • Optional: tahini or yogurt-based dressing

Instructions:

  1. Preheat oven to 425 °F (220 °C).

  2. On a baking sheet, toss chickpeas + chopped veggies + olive oil + the Paramour seasoning + a bit of salt & pepper until everything is coated.

  3. Spread out in a single layer and roast ~20-25 minutes, turning once halfway through, until veggies are tender and chickpeas are slightly crisp.

  4. Serve the roasted mixture over fresh greens (if using) and drizzle with your dressing.

  5. Enjoy warm or room temperature.
