Ingredients:

1 can (15 oz) chickpeas, drained & rinsed

1 red bell pepper, chopped

1 zucchini, sliced

1 small red onion, cut into wedges

2 tbsp olive oil

1–2 tsp Paramour Spice “Around Town Everything Seasoning”

Salt & pepper to taste

Optional: handful of fresh spinach or arugula

Optional: tahini or yogurt-based dressing
Instructions:

Preheat oven to 425 °F (220 °C).

On a baking sheet, toss chickpeas + chopped veggies + olive oil + the Paramour seasoning + a bit of salt & pepper until everything is coated.

Spread out in a single layer and roast ~20-25 minutes, turning once halfway through, until veggies are tender and chickpeas are slightly crisp.

Serve the roasted mixture over fresh greens (if using) and drizzle with your dressing.
