Ingredients
For the Pie Dough

For the Peach Filling

3 cups Fresh or Frozen Peaches, peeled and diced (if frozen, no need to thaw)

½ cup Granulated Sugar

2 tablespoons Cornstarch

1 teaspoon Ground Cardamom

½ teaspoon Paramour Spice Co. "Spicy Affair" Seasoning

1 tablespoon Lemon Juice
For Assembly

1 large Egg, beaten (for egg wash)

1 tablespoon Coarse Sugar (for sprinkling)

Instructions
1. Make the Pie Dough

Combine Dry: In a large bowl, whisk together the flour and salt.

Cut in Butter: Add the cold, cubed butter to the flour. Using a pastry blender or your fingertips, cut the butter into the flour until it resembles coarse crumbs with some pea-sized pieces of butter remaining.

Add Water: Gradually add the ice water, 1 tablespoon at a time, mixing until the dough just comes together. Be careful not to overmix.

Chill: Divide the dough in half, flatten each half into a disc, wrap tightly in plastic, and refrigerate for at least 30 minutes.
2. Prepare the Peach Filling

Combine: In a medium bowl, combine the diced peaches, sugar, cornstarch, cardamom, "Spicy Affair" Seasoning, and lemon juice. Stir gently to combine.
3. Assemble and Bake the Hand Pies

Roll Dough: On a lightly floured surface, roll out one disc of chilled dough to about ¼-inch thickness.

Cut Shapes: Use a 4-5 inch round or square cookie cutter (or a knife) to cut out shapes. You should get 6-8 shapes per disc. Repeat with the second disc of dough and any scraps.

Fill Pies: Place a generous tablespoon of peach filling in the center of half of the dough shapes.

Seal Pies: Place another dough shape on top of each filled shape. Use your fingers to press the edges firmly, then crimp with a fork to seal completely. Cut small slits in the top of each hand pie to allow steam to escape.

Egg Wash & Sprinkle: Transfer the hand pies to a parchment-lined baking sheet. Brush the tops with the beaten egg wash and sprinkle with coarse sugar. For an extra kick, a very light pinch of "Spicy Affair" Seasoning can be added on top.
