1 tbsp olive oil

1 tbsp Dijon mustard

¼ cup broth or white wine

Optional: fresh thyme
Instructions:

Pat medallions dry → season both sides generously.

Heat oil in skillet; sear pork 3 min per side.

Remove pork; whisk mustard + broth into pan to deglaze.

Return pork → simmer 2–3 min until cooked (145°F).
