Salmon with Mango Salsa

Ingredients

  • 4 salmon fillets (6 oz each)

  • 2 tsp Paramour “Side Piece”

  • 1 tbsp olive oil

  • Salt & pepper

Mango Salsa:

  • 1 ripe mango, diced

  • ½ red bell pepper, diced

  • ¼ red onion, finely chopped

  • 1 jalapeño, seeded and minced

  • Juice of 1 lime

  • 2 tbsp fresh cilantro, chopped

  • Pinch salt

Instructions

  1. Preheat oven to 400°F. Rub salmon with olive oil, sprinkle with Paramour spice, salt, and pepper.

  2. Bake salmon for 12-15 minutes until flaky.

  3. Meanwhile, combine all salsa ingredients in a bowl. Let sit to meld flavors.

  4. Serve salmon topped with fresh mango salsa.

Tips

  • For crispy skin, pan-sear salmon skin side first before baking.

  • Serve with quinoa or a light green salad.
