Turkey & Butternut Squash Chili

Ingredients

  • 1 lb ground turkey

  • 1 tbsp olive oil

  • 1 onion, diced

  • 3 cloves garlic, minced

  • 1 medium butternut squash, peeled and cubed

  • 2 tsp Paramour “Spicy Affair”

  • 1 can (15 oz) kidney beans, drained and rinsed

  • 1 can (14 oz) diced tomatoes

  • 2 cups chicken broth

  • 1 tsp smoked paprika

  • Salt and pepper to taste

Instructions

  1. Heat olive oil in large pot over medium heat. Sauté onion and garlic until soft (~5 min).

  2. Add ground turkey and Paramour spice; cook until browned (~7 min).

  3. Stir in butternut squash, beans, tomatoes, broth, and smoked paprika.

  4. Bring to boil, then reduce heat and simmer 30 minutes until squash is tender. Season with salt and pepper.

  5. Serve with sour cream or avocado slices.

Tips

  • For extra smoky flavor, add chipotle powder.

  • Freeze leftovers in portions for easy meals.
